Healthy Holiday Side – Roasted Vegetables

This roasted vegetable side is a delicious way to get veggies in and an easy dish you can prepare and bring to a holiday gathering. I try to practice my same strategy throughout the year around the holidays- a balanced plate with mostly vegetables and protein. This helps me feel my best while still being able to enjoy special holiday foods.

The rosemary, thyme and sage in this recipe adds nice flavour and compliments these hearty vegetables.
